Wholesome never looked so good! While wholesome didn't always equal delicious growing up, things have definitely changed! This hearty childhood recipe has been adapted to be both highly nutritious and very delicious.
With the culinary goal of discovering simple ways to enhance protein content in plant-based offerings, this banana definitely won't disappoint.
3-4 large ripe bananas* ½ cup brown sugar ½ cup of applesauce (non-vegan = sub 2 large eggs) 4 tbsp melted vegan butter** (non-vegan = sub butter) 1 tsp vanilla extract 1 ½ cups organic flour ½ cup ground almond meal
2 tbsp quinoa flakes 2 tbsp vegan protein powder
½ tsp Himalayan sea salt 1 tsp baking soda ½ tsp ground cinnamon
How to create this nutritious and delicious protein-rich banana bread:
Preheat oven to 375°
Mash bananas into a thin batter
Add brown sugar and applesauce. Mix well.
Add melted butter, and vanilla. Mix well.
In separate bowl mix flour, almond meal, quinoa flakes, protein powder, salt, baking soda, and cinnamon. Add to wet ingredients. Mix well.
Pour into a greased or parchment lined loaf pan.
Bake at 375° for about 50 minutes, or until an inserted knife comes out clean.
* Too many ripe bananas? Then pop them into the freezer.
* Too many bananas in the freezer? Thaw before mashing into a thin batter.
** Vegan butter can be substituted with coconut oil or MCT oil.
